FLAVOR OF THE MONTH: PASTA PRIMAVERA
Spring has sprung and we’re celebrating with a special organic baby food flavor this month.
We blend organic orzo pasta with a sauce of summer squash with red bell pepper and sweet corn, and add a touch of olive oil and basil. High in vitamins A and C, it doesn’t just look bright and taste fresh, it’s also great for strengthening baby’s immune system and supporting eye development.
1 cup organic orzo pasta
1 cup organic yellow squash, chopped
1 cup organic red bell pepper, chopped
1 cup organic sweetcorn
1 tsp organic olive oil
1 handful of fresh basil leaves
Bring water to a boil in a saucepan and add pasta. Cook until soft, about 8 minutes.
Drain the pasta and cool under running cold water.
In a pan, heat the olive oil and add the red bell pepper. Fry until it starts to get soft, about five minutes.
Then add the chopped squash and continue to fry for another 5 minutes or until soft.
Finally add the sweet corn and continue to fry for another two minutes.
Place all ingredients into a blender, add a splash of water and blend to desired consistency.
